TEXAS MUSTARD COLESLAW

Luby's mustard slaw is a classic dish often associated with Luby's Cafeteria, a popular chain of cafeterias primarily located in Texas and is my favorite type of slaw.

This slaw typically features shredded cabbage mixed with a tangy mustard-based dressing. While the exact recipe may vary, a basic version might include ingredients such as shredded cabbage, mustard, vinegar, sugar, salt, pepper, and perhaps a touch of mayonnaise or other creamy element for richness.

It's a simple yet flavorful side dish that pairs well with a variety of main courses, especially barbecue or fried chicken.

 INGREDIENTS

  • 1 large cabbage
  • 1 cup chopped dill pickle
  • 3/4 cup chopped onion
  • 1 cup mayonnaise
  • 2 tablespoons mustard
  • 2 teaspoons sugar
  • 1 teaspoon celery seed
  • 2 teaspoons vinegar
  • 1/8 teaspoon pepper

DIRECTIONS

Shred the cabbage. Combine the dill pickle and onion and set aside.
Combine remaining ingredients in a bowl; stir well.
Pour over cabbage mixture; toss.
Cover and chill.

Yield: 14 to 16 servings.
