Cornbread Waffles

I make cornbread waffles often because they're such an easy alternative to traditional cornbread. They're crispy around the edges, tender inside, and especially good served with pinto beans, chili, or soup. They're also delicious on their own with a little butter.

You can keep them simple or add bacon, onion, peppers, corn, green chilies, or jalapeños to the batter.


INGREDIENTS

  • 1 cup all-purpose flour
  • 1/2 cup cornmeal
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 3 large eggs
  • 1 cup shredded cheddar cheese
  • 1 cup milk
  • 2 tablespoons melted butter or vegetable oil
  • Optional Add-Ins:

    Cooked and crumbled bacon, finely chopped onion, bell pepper, corn, green chilies, or jalapeños


    DIRECTIONS

    • Preheat your waffle maker according to the manufacturer's instructions.
    • In a large bowl, combine the flour, cornmeal, baking powder, and salt.
    • Add the eggs, milk, melted butter or oil, and shredded cheese. Stir just until everything is combined.
    • Fold in any optional add-ins you'd like to use.
    • Lightly grease the waffle maker if needed.
    • Spoon the batter into the preheated waffle maker, using the amount recommended for your particular machine.
    • Close the waffle maker and cook until the waffles are golden brown and crisp.
    • Serve immediately with butter, pinto beans, chili, soup, or your favorite toppings.
