I wanted to make chocolate cupcakes the other day, but when I reached into my pantry, I realized I didn't have a chocolate cake mix. Yes, I know I could have made them from scratch, but I was in a hurry.

After a little trial and error, I came up with what I think is the perfect way to turn a white cake mix into a chocolate cake mix. It is incredibly easy, works great every time, and the finished cupcakes taste much more like homemade than you would expect from a boxed cake mix.
So, if you're ready to make chocolate cupcakes and reach into your pantry only to discover that all you have is a box of white or vanilla cake mix, don't worry. You can turn that white cake mix into chocolate cake with just a few simple additions.
This is an easy shortcut when you don't have a box of chocolate cake mix on hand. You can use the same method for cupcakes or a cake.
- 1 box white or vanilla cake mix
- Ingredients called for on the cake mix box
- 1/4 cup unsweetened cocoa powder
- 1/4 cup sugar
- 1/4 cup sour cream
Prepare the white cake mix according to the directions on the box, using whole eggs.
Before mixing, add 1/4 cup cocoa powder, 1/4 cup sugar, and 1/4 cup sour cream.
Mix everything together until well combined.
Bake according to the directions on the cake mix box.
