DRAGONFRUIT CUPCAKES

CUPCAKE INGREDIENTS
  • 1 box vanilla cake mix or favorite vanilla cake recipe
  • Ingredients listed on box (usually eggs, oil, water)
  • 2–3 tablespoons freeze-dried dragonfruit powder
  • 1 teaspoon vanilla extract

CUPCAKE DIRECTIONS

  • Preheat oven to 350°F and line a cupcake pan.
  • In a large bowl, prepare the cake mix according to package directions.
  • Add dragonfruit powder and mix until fully combined. 

    Start with 2 tbsp → add more if you want stronger color/flavor. 
  • Add vanilla extract 
  • Divide batter evenly into cupcake liners (about ¾ full).
  • Bake according to box directions 
  • Let cool completely before frosting


FROSTING INGREDIENTS
  • 1 cup (2 sticks) unsalted butter, softened
  • 3–4 cups powdered sugar
  • 2–3 tablespoons freeze-dried dragonfruit powder
  • 1/4 cup heavy cream or milk
  • 1 teaspoon vanilla extract
  • Pinch of salt

FROSTING DIRECTIONS

  • Beat butter until smooth and fluffy (2–3 minutes).
  • Gradually add powdered sugar, mixing on low.
  • Add dragonfruit powder and vanilla.
  • Add cream or milk
  • Beat on high for 2–3 minutes until light and fluffy. - add more powdered sugar if frosting seems a bit too thin for piping until you get desired consistency.
