I prepare this broccoli soup multiple times each month. It's low in carbs, simple to whip up, and absolutely delicious.


  • 5 cups fresh broccoli cut into small pieces
  • 1 medium onion, chopped
  • 2 tablespoons butter
  • 1 cup of water
  • 2 cups of chicken broth
  • 1 Cup of heavy cream
  • 8 oz softened cream cheese
  • 1/2 cup Parmesan cheese
  • 2 ½ cups shredded Cheddar cheese or about 4 oz of Velveeta cheese


  1. Sauté onions in butter until translucent
  2. Add the rest of the ingredients to the pot except for the broccoli
  3. If you have an immersion blender, you can use it to blend the mixture quickly and make the soup extra creamy.
  4. Add chopped broccoli
  5. Cover and cook on low for 20-30 minutes. Cook time will depend on the size of the broccoli.
