This shortbread holds a top spot among my favorite cookies, and it's incredibly versatile when it comes to flavor. Just swap out the jam or jelly—whether it's blueberry, strawberry, pineapple, banana, apple, or any other flavor you fancy—the options are limitless.


  • 1/2 Cup butter
  • 1/4 Cup powdered sugar
  • 1 egg white
  • 1/4 tsp salt
  • 1 tsp vanilla extract
  • 1 tsp almond extract (optional)
  • 1 1/4 cup flour


  1. Preheat oven to 350°
  2. Mix butter and powdered sugar thoroughly.  Add egg white, salt, vanilla & almond extracts and mix again.
  3. Finally add flour and mix a final time.
  4. Roll mixture into balls or place into piping bag.  Top with your favorite jam or jelly.
  5. Bake for 8-10 minutes.
