A country breakfast casserole is a hearty and comforting dish that's perfect for feeding a crowd or enjoying as a cozy weekend brunch. 


  • ½ lb favorite sausage
  • 1 small onion , diced
  • 1 red bell pepper , diced
  • 3 cloves garlic , minced
  • 2 large potatoes, diced
  • 6 large eggs
  • 1/1/4 cup milk
  • 1 cup shredded cheddar cheese , or favorite cheese
  • salt & pepper to taste
  • salsa , for serving



  1. Preheat oven to 350 degrees. Spray a 9x13 pan or iron skillet with cooking spray.
  2. Combine the eggs, milk, cheese and salt and pepper in a large bowl. Mix with whisk or mixer just until combined.
  3. Add sausage to skillet and cook until browned, breaking it into small pieces.  Drain most of the grease and add the sausage to the bowl with the egg mixture.
  4. Add potatoes, onions,  and peppers to the skillet and cook for about 8-10 minutes until the potatoes are golden brown. Add mixture to the bowl with the eggs and stir everything to combine.
  5. Pour mixture into greased 9x13’pan or skillet and bake for 35-50 minutes or until the edges are set and the center is just barely jiggly.
  6. Serve with salsa, sour cream, or condiment of choice.
