A country breakfast casserole is a hearty and comforting dish that's perfect for feeding a crowd or enjoying as a cozy weekend brunch.
- ½ lb favorite sausage
- 1 small onion , diced
- 1 red bell pepper , diced
- 3 cloves garlic , minced
- 2 large potatoes, diced
- 6 large eggs
- 1/1/4 cup milk
- 1 cup shredded cheddar cheese , or favorite cheese
- salt & pepper to taste
- salsa , for serving
DIRECTIONS
- Preheat oven to 350 degrees. Spray a 9x13 pan or iron skillet with cooking spray.
- Combine the eggs, milk, cheese and salt and pepper in a large bowl. Mix with whisk or mixer just until combined.
- Add sausage to skillet and cook until browned, breaking it into small pieces. Drain most of the grease and add the sausage to the bowl with the egg mixture.
- Add potatoes, onions, and peppers to the skillet and cook for about 8-10 minutes until the potatoes are golden brown. Add mixture to the bowl with the eggs and stir everything to combine.
- Pour mixture into greased 9x13’pan or skillet and bake for 35-50 minutes or until the edges are set and the center is just barely jiggly.
- Serve with salsa, sour cream, or condiment of choice.
