LOW CARB BROCCOLI CHEESE SOUP
I prepare this broccoli soup multiple times each month. It's low in carbs, simple to whip up, and absolutely delicious.
INGREDIENTS
- 5 cups fresh broccoli cut into small pieces
- 1 medium onion, chopped
- 2 tablespoons butter
- 1 cup of water
- 2 cups of chicken broth
- 1 Cup of heavy cream
- 8 oz softened cream cheese
- 1/2 cup Parmesan cheese
- 2 ½ cups shredded Cheddar cheese or about 4 oz of Velveeta cheese
DIRECTIONS
- Sauté onions in butter until translucent
- Add the rest of the ingredients to the pot except for the broccoli
- If you have an immersion blender, you can use it to blend the mixture quickly and make the soup extra creamy.
- Add chopped broccoli
- Cover and cook on low for 20-30 minutes. Cook time will depend on the size of the broccoli.
